Microwave Coffee Cup Scramble

1 minute prep time | serves 1
2 eggs
2 Tbsp milk
2 Tbsp shredded cheddar cheese
Salt and pepper
1. Coat a 12-oz microwave-safe coffee mug with cooking spray. Add eggs and milk; beat until blended.
2. Microwave on High 45 seconds; stir. Microwave until eggs are almost set, 30 to 45 seconds longer.*
3. Top with cheese; season with salt and pepper.
*Microwave ovens vary. Cooking times may need to be adjusted.
This is a quick easy recipe children can make with a parent’s supervision. To cook eggs successfully in the microwave, follow these tips:
• For even cooking of an unbeaten egg, use only 50 or 30 percent power. To make omelets or scrambled eggs, you can use full power.
• Never microwave an egg in its shell. It will explode.
• Even out of their shells, unbeaten eggs may explode in the microwave. To prevent this, use the tip of a knife to break the yolk membrane before microwaving it.
• For more even cooking, cover cooking container with a lid, or wax paper. If your microwave oven doesn’t have a turntable, rotate the dish once or twice during cooking time.
