Grilled Pineapple Salsa



1 pineapple, peeled and cored, cut into ½” slices
¼ cup chopped red onion
¼ cup chopped green bell pepper
2 tbsp. chopped cilantro
2 jalapenos, seeded & minced
Juice of ½ fresh lime
¼ cup rice wine vinegar
1 tsp. kosher or sea salt
Olive oil or cooking spray



Brush pineapple slices with olive oil or spray with cooking spray and grill for 3 minutes per side.
When cooled, chop into ½” cubes and mix with other ingredients in a glass bowl.
Drizzle with olive oil if desired and cover with plastic wrap. Let sit for 30 minutes and serve.
