Easy Grilled Artichokes with Chipotle Mayo Dipping Sauce
First, steam artichokes until leaves begin to open. After steamed, leave out until cool. Next, preheat BBQ or Indoor Grill. Then cut cooked artichokes in half and brush with olive oil. Place artichokes directly on grill; finally, rotate and cook until charred (about 5 minutes on each side).
Chipotle Mayonnaise Dip:
1 cup mayonnaise
2 teaspoons adobe (the sauce from canned chipotle)
3 teaspoons lime juice
1 tablespoon cilantro, washed and chopped (optional)
Simply combine all of the ingredients and serve.
