Reverse Seared Tri Tip Roast
4 lb Tri Tip Roast Texas Star Beef
Your favorite dry rub or seasoning
Season roast and cook at 250 degrees for about 2½ hours or until internal temperature reaches 125 degrees.
Remove roast, wrap in foil to keep warm.
Bring the heat up to 600 degrees.
Remove roast from foil and place back on heat. Sear for 2 minutes on each side, locking in flavor and juices.
Remove from heat and allow to rest for 15 minutes.
Slice against the grain.
