Black Tip Shark Skillet Fajitas with Pineapple Salsa  

 

WHAT YOU WILL NEED

1 pound black tip shark

1 green bell pepper, thinly sliced

1 red bell pepper, thinly sliced

½ sweet onion, thinly sliced

2 tablespoons butter

Juice of 1 lime

Packet of your favorite Fajita seasoning

Flour tortillas

 

For the Salsa:

Juice of 1 lime

½ fresh pineapple, diced with core removed and juices preserved

1 large tomato, diced

½ small jalapeno, diced

½ red onion, minced

3 teaspoons black pepper

 

HOW TO PREP 

For the Salsa: Combine all ingredients in a medium bowl and set aside for at least 15 minutes before serving.

Cut shark into thin strips and set aside. Slice bell peppers and onion. Melt butter in skillet and saute vegetables for about 3 minutes. Add shark, fajita seasoning and lime juice and stir fry for 5 minutes. Serve with warm tortillas, Mexican rice, pineapple salsa and garnish with cilantro.
