Tuscan Mixed Vegetable Skewers

 

Ingredients:
1 large red onion
1 large white onion
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 orange bell pepper
1 green zucchini squash
1 yellow zucchini squash
1 small pack button mushrooms
10 bamboo skewers
Kosher salt to taste
Granulated garlic to taste
Olive oil- first cold pressed for drizzling

Directions:
Cut all vegetable ingredients except the mushrooms into 1 1/2 inch squares. Soak bamboo skewers for 30 minutes in water so that they will not burn. Assemble ingredients onto the skewers alternating vegetables in series and by color. Top the skewer with a mushroom. Place In a flat pan the assembled skewers and drizzle with olive oil on each side. Sprinkle with salt and garlic powder to taste. On medium heat, grill skewers for approximately 5 minutes on each side until desired doneness has been attained.
